Recipe: Sturgeon with Charred Vegetables and Barigoule Emulsion

Description: Spoon the barigoule emulsion in the center of the plate. Place cooked sturgeon slightly off center. Garnish with charred vegetables, placing the stems of the chokes face upwards with the squash in between each piece. Finish plate with herbs and caviar/roe. Enjoy!

Culinary Fight Club presents its Black Box PRO Series!  This culinary competition is fast, furious and serious!  Chefs must rise to the challenge and prepare the perfect plate from a basket of 15 mystery ingredients. Chefs will be given a single burner, salt, pepper and oil. They can bring a 24 gallon container of gear and two unprepared ingredients. The judges will be looking for the perfect bite. Join the competition and cheer on your favorite chef in this fast paced competition.  Chefs bewarethe Cheferee will be watching you.

Description: Chef Matt McMillin and Emily Wines will focus on everyone’s favorite topic, Wine, and Cheese pairings.  Chef Matt McMillin will demonstrate and talk through the Cooper’s Hawk Candied Bacon and Artisan Cheese platter, and demonstrate how to make candied bacon, and Black Fig Jam.

Emily Wines, Master Sommelier, will talk through 3 wines that pair well with the Cheese platter, and how the flavors intertwine.

Recipe: “Mama’s Meatballs”

Description: Joe will be sharing his “Mama’s Meatballs” recipe – a Chicago-Italian Sunday supper tradition connected to his childhood in Melrose Park, one of Chicago’s old Italian neighborhoods. Chef mastered his Mama’s homemade meatballs recipe by using high quality ingredients, premium cuts of veal and beef, imported Parmesan Reggiano cheese, and a special blend of Italian seasonings. He’ll be serving it with his classic Marinara.

Description: Soto Betawi has a nice combination of herbs, spices, coconut milk, beef and tomato which produces a soup with a very deep flavor.  It is usually served alongside rice, crackers, and cucumber pickles (called acar).
